Corn Starch "Alfajores"



  • EGRAN Corn Starch: 300 g
  • Wheat flour: 200 g
  • Butter: 200 g
  • Sugar: 150 g
  • Yolk: 3
  • Baking Powder: 2 teaspoons
  • Vanilla Extract: 1 teaspoon
  • Baking Soda: 1/2 teaspoon
  • Lemon Zest




Sift together the starch, flour, baking powder and baking soda. Beat the butter with the sugar and add the yolks one by one and, little by little, add the mixture of starch and flour. Add the vanilla extract and lemon zest. Knead lightly. Stretch and cut into medallions. Place them in a buttered and floured baking pan and cook in moderate oven. Remove and let cool. Fill with “dulce de leche” (milk jam) and cover the sides with grated coconut.
